Spiced Pear Compote

A twist on the traditional Russian compote that's made by stewing fruits and is usually served cold, this version adds spices and is served warm for cold winter days.

Ingredients
- 5-6 Pears (or use 1 cup dried pears or 1 quart pear juice)
- 4 Cinnamon Stricks
- 2 Star Anise
- 8 Cloves
- 3 Allspice berries, whole
- ½ Teaspoon Cardamom, whole
- ½ Teaspoon Black Pepper, whole
- 1 Tablespoon Fresh Ginger, Sliced
- ½ Cup Honey, Maple syrup or sugar
Instructions
- Core and slice pears, place in a large pot and fill with 3-4 quarts of water to cover the pears. If using 1 quart pear juice, reduce the water to 2-3 quarts. Add all spices.
- Bring to a boil, lower the heat to a simmer. Cook for about 15 minutes, turn off the heat and cover with a lid. Let steep for 30 minutes.
- Strain through a sieve. Add sweetener of choice.
- Stir and serve hot.
Notes
Depending on how ripe and sweet your pears are you may need to sweeten it more.
