Sweet, juicy, bursting with the flavors of summer, this salad is all of the above and more! The inspiration for this salad came from a trip to our local Trader Joe’s where they were sampling a salad with a similar base. Using fresh corn off the cob is the best option but you can also use canned corn. I love Trader Joe’s mozzarella cheese balls but any fresh mozzarella can be used as well. If you do not have a Trader Joe’s next to you, try substituting the Orange Muscat Champagne Vinegar for any orange based vinegar. This is a great party recipe but can also be cut in half for a family dinner.
- 3 Cups corn (about 3 corn on the cob)
- 2 Cups grape tomatoes
- 2 avocados
- ½ cup chopped scallions
- 1 cup cilantro leaves
- 16 ounces fresh mozzarella cheese balls
- ¼ cup Orange Muscat Champagne Vinegar (Trader Joe’s)
- ¼ teaspoon salt
- black pepper
- Cook the corn in a pot of boiling water for 5 minutes. Cool. Cut off the corn from the cob.
- Cut the tomatoes in half. Cut the mozzarella cheese balls in half. Dice the avocados.
- Toss all ingredients together. Serve right away. Best eaten the same day.
